guidothepimmp Yeh man.. baking soda and superglue works especially well for nuts that have been cut too deep.
that's exactly where I saw it done first..

thats a very Interesting queastion.. why one coat vs the other..
EVERY finish you add effects the tonal quality of your Guitar.. all though maybe not to the degree of wood selection.. it has an impact..
For me it was the fact that varnish does not penetrate the wood, is hard and brittle and has a tendency to crack over time. so will need to be redone every so often..
Sealnt does penetrat the wood to a small degree, and also "feeds the wood" is a hard and durable finish without the cracking and brittlnes of varnish..
but it is well worth the time to do your research.. there are more options than just varnish/paint sealant.
there is also
penetrating oils like teak oil
tru-oil
penetrating wax's
linseed oil
etc
each have there own pro's and cons
