Hard to argue with most names on here, and everyone knows all the big names already, but a relatively unknown guy I rate quite highly is Jim Mankey (who once, I think, played with the Mael brothers in Sparks, and then went on to do most of his work with Concrete Blonde). Great feel; plays for the song; I like his style.

@ Stratisfear
What good stuff has Jim Mankey done. I actually bought some Sparks singles long years ago.

I should also list Bernard Butler, whose work with Suede on their first two albums was great (and I don't think he's been mentioned here up till now). It's weird that I should admire two heavy whammy users so much when I prefer playing straight hardtails...but there you go.
@Squonk
I actually haven't heard anything Jim would've done with Sparks (I think, like with the early Yardbirds, he was relegated to bass by internal politics, like Page was), but I first came across a few Concrete Blonde tracks from some old surfing videos I had, and i loved his work. If you can, check out a few songs like: Over your shoulder; God is a bullet; Help me; Scene of a perfect crime...

I'm really loving Slash at the moment... what a great player and amazing feel!!
Malkav
My favourite guitarists at the moment (meaning I might be onto something different eventually, except petrucci and govan, always love them) are:
Guthrie Govan
John Petrucci
Danielle Gottardo
Bireli Lagrene
Al Di Meola
Dave Martone

Doc Watson is a very fine player indeed. Having said that, I don't have anything of his on CD and am not particularly on the lookout, but I have heard tracks with him on and he is a very impressive player.

I thoroughly enjoy Tuck Andress. Then I also rate Paco de luca, Al DI Meola, Tommy Emmanuel is genius.
Locally Guy Buttery is interesting.
Then there's Rowan Stuart, a Durban boy has a solo album and was with Cynosure, very creative.
and a guy by the name of Barry Thompson. I saw him in a production at the Heritage Theatre in Hillcrest. Very, very good.

Marty Friedman is So cool that he even gets a smiley infront of his name. Hell yeah. Love that dude! And what I like about him even more is that he doesn't use fancy guitars. His signature model is based on an ibanez SZ with no hectic add ons. I remember him saying (along the lines) "you don't need the most expensive guitar to be a good guitarist". I really like that. Most guitarist go for the most expensive guitar with everything modded that they can. He just uses a Ibanez SZ "with stars on it". METAL!!!!!

Buckethead anyone?

I like any guitarist who plays with his heart and not is head!
One particular guitarist I discovered though is Phil Palmer who was musical director for the Strat Pack concert, the 50th Anniversary celebration of the Fender Stratocaster. I so enjoyed his versatility that I did some research and found out that he is one of the worlds top session guitarists and can be found on just about anyone's CD. It seems that when you need a guitarist that has infinite flexibility then Phil is your man.
He has toured and played with: Eric Clapton, Dire Straits, Tears for Fears, Tina Turner, George Michael, Elton John, Bryan Adams, Pete Townshend, Robbie Williams, Chris De Burgh, Wishbone Ash, Murray Head to name but a few. The full list of people he’s worked with is intimidatingly long!
