I love many guitarists, but some of them would be Larry Coryell, Jeff Beck, Ollie Halsall, Ray Gomez, Scott Henderson, Johnny Winter, Rory Gallagher, Ronnie Montrose, Roy Buchanan, John Goodsall, Al di Meola, Ronnie Earl, Paul Gilbert, Pat Travers, Frank Marino, Frank Zappa, Hendrix and Carlos Santana. More of the old school here, but I think they had more soul than a lot of the modern shredders.

I would say my favourite guitarist are:
Angus and Malcolm Young, Most of my play style is based off of Malcolm's approach to rhythm guitar as well as some of my Lead playing is based off of Angus's licks. But I would say I'm more influenced by Malcolm. if i pick up my guitar, the first ever lick i play is a open chord over driven lick in the same way Malcolm did it and still does.
Malcolm and Angus Young: My play style is mostly based off of Malcolm
Nigel Hendroff (Hillsongs Lead Guitarist): Everything I know regarding triads and higher octave chord progression and inversions I learned by watching him.
Mark Knopfler: He's finger picking play style is something I have been working on for the last couple of months. I know there are other guitarists that do it too, but he was the first I saw.
Andy from the proguitarshop.com videos on youtube. That dude should make a record. Cause he is good.

Mustaine has always been one of my favourite guitar players as well but I've always thought of him as a bit of an arrogant anus (granted, he can back most of it up though, he is THAT good).
There are so many that I call favourite: Steve Morse, John Petrucci, Vinnie Moore, Steve Vai, Guthrie Govan, Paul Gilbert, Randy Rhoads, Eddie Van Halen...lately I've been completely blown away by Rusty Cooley's technique but for amazing chops AND incredible emotion I would have to say my favourite favourite would probably have to be the late great Shawn Lane!
