There's nothing that says you can't lay down an entry a part at a time. You don't have to play all the parts simultaneously.
The thing about that piece, as I said, is the way the bass line and the melody line move relative to each other. That's quite common in baroque music, and that's the only point I wanted to make.
To do a piece like that you don't have to fingerpick it in all it's multi-voiced glory in a single take. You could lay down the bass line and then dub another part over that.
