Just be aware that removing your tone pot will make the guitar brighter overall, which some find too much of a good thing (myself, I love it - you get a bit more volume and dynamics too). You can obviously turn down the tone on the amp to compensate.
Wiring two individual volumes on a three pickup guitar is tricky - there is always at least one switch position that has no volume.
The guitar has three pots at present. So my plan is to assign one pot to each pickup as a volume control.
I came up with a plan some years ago that would have essentially split the three pots into two circuits with either circuit being selectable or both run together. It would have required two Les Paul style pup switches. It could easily be modified to allow for two volume pots. It would have allowed any combination of three pups (leaving phase reversal out of the picture) but would not have allowed a situation where you had all pups off.

Wiring them independently so they do not interact is easy - pickup wire to wiper, output to outside lug (earth stays the same).
