Graeme was in at the Gear Junkie on Sat, we was debating his next build - a 3xP90 strat style guitar - that's something I'd like to see! He has 3 tele's on show at GJ and is always up for a visit at his workshop, which is just around the corner. The "build your own" course he did was quite successful if that's your thing (or he'll make you one).
He's got a sweet stash of wood and I think his neck profiles are realllllyyy good - he's put a lot of thought into that. Also winds his own pickups.
Brian does a lot more than uke's and oil can guitars - I'm very fond of his barncaster style relic finish. Also winds his own pickups. You can visit him on the farm (2-3hrs out of Cpt) ,he's also a really nice guy.
I've not seen a Foster built guitar, but have only heard very good things about his work. Only drawback is time, he's quite busy!
On a budget, Francois is a alternative - he's not got quiet as much build experience as the others but I've seen a tele build of his and it was good. I particularly liked the finish he did, a kinda black/gray burst.
Up in Jhb the there's BvanS (Did Chabenda's tele, looked amazing!), Grant Fouche (his stuff looks pro level playable) and JD Customs (no idea).
