It's all music. Some simple, some complex. Music has also moved beyond where it is complex only in the melody and harmony. With the advent of the "recording studio as instrument" it has become more complex in other ways too, so much so that we now have specialists for every step of the process: composers, arrangers, musicians, recording engineers, producers, mix engineers and mastering engineers. Occasionally you find gifted individuals like Zappa who do most of it themselves and excel at it all, but they are as rare as always.
I have to admit that I am not a bach fan
Why not? Are you one of those who believe his music is too mechanical? Listen to Wanda Landowska on that very limited instrument, the harpshichord and realise that while it is often performed mechanically, it doesn't have to be.
Rock music can be very complicated, but on average not as complicated
But the composers you mention are not average by even classical music standards. To gather together a group of the best composers of the last few hundred years and compare their average with the average musical output of a style of music which has only been around for forty years is unfair.
I said SYMPHONY music is much more COMPLICATED.
Well, actually you said:
Classical music is much more complicated and sophisticated than rock.
...but I take your overall point. I wouldn't compare the 5th with
Smoke on the Water either (which is another Zappa reference in itself - he sure does get around).
