On a pedalboard your cables are mostly static - that is you're not gonna be moving/pulling on them much - but I'm gonna rant about moulded plugs and ones with those horrible claw efforts anyways ?
I avoid anything with a molded plug - I like being able to repair it.
If the plug has this kinda metal claw you have to crimp around the cable to avoid pulling on the soldering - I'm not a fan, fixed way to many of those.
I go for the ones that have a sleeve around the cable that works like the claw - but better. (Could only find a exploded view of a xlr). I've got a bunch of cables with these style connectors that lasted forever and are fairly easy to repair - the last repair was to replace the cable that broke in the middle - when I checked the soldering at the plugs was 101%.
Though for a pedalboard, I'd probably build it up first, then see how much space I need to save and make cable to measure.
One large downside, those plugs can be pricey, Neutriks are around USD6/ea! But...I've found that warwick rockcables come with near identical copies - get a whole 3M cable for the price of one plug and cut to fit.
You can always go for the solderless styles ones, though that be silly pricey
