I recently bought a nearly new Korg digital piano. Got it for a steal, so didn't waste much time. Question though is this: It has two small headphone jacks at the back, instead of a 1/4" jack. For recording/performance purposes, will a adapter lose a lot of the quality? Should I rather have the jack replaced by a suitably qualified electronics guy? Or will an adapter suffice?

No quality loss with a small hp jack and using an adaptor.
However, you must just be careful of how much weight you hang off a minijack (especially pcb-mounted ones that are not bolted to a chassis), as an adaptor with a 1/4" jack adds up to a long and heavy lever - whack it once and you break the socket or worse, break it off the board.
I'd probably make a "breakout box" 1/8" inch minijack and short cable, terminating with a solid box fitted with two 1/4" sockets that I can mount on top of the piano with double-sided tape.
