In theory. In many cases it may cost more than it's worth, and I think most guys who build guitars and put their name on the headstock would only want to take on their own guitars as they understand every aspect of the guitar.
Guitars are an entire system, with all the parts operating together, so changing one thing can have implications elsewhere. Hugh Cumming has a modified Martin. He was having it refinished and the neck reset by Andy McGibbon, so he asked Andy to open the guitar up and shave the braces. It's done, and Hugh likes the sound (says the bottom end is better) but he can't put 13s on it anymore. Remember that the top of an acoustic is designed to vibrate a certain way under a certain stress. There are physical as well as tonal considerations.
