Theoretically it would be possible to voice an acoustic after it has been built, although understandably it could work out to be more costly than the overall value of the guitar.
Also note that the amount and type of finish applied to an acoustic also plays a major role in tone. There is no point in putting in all that effort only to go and slather the finish on and dampen the vibrations. Some of the thinnest finishes I have ever applied have been to the faces of acoustics, where they have measured well under 85 microns, or 0.085 mm. Very tricky to do without ruining the finish at the final polishing stage!
