Building a fuzz... whats the catch?

So I looked on the internet and found alot of schematics for pedals that look insanely easy to build! So I'm getting my stuff together and Im going to borrow an oscilloscope to check the wave patterns. My plan is to build several easy circuits and tweak them to build the perfect fuzz ( according to my tastes). I'm also going to model it properly on orcad and eagle first to sort out any kinks. But my question is... Whats the catch? Why dont everyone build their own pedals?
