I've got myself a Samsung galaxy ace and i want to know how i can stop some of my apps accessing. The internet. Its costing huge amounts of airtime. So is there a way to stop the phone looking for Facebook updates while it sits there. I only want to see them when i log onto Facebook. Same with the gmail. Every five seconds its telling me there's an update.
Yeah, that can be annoying if you don't have a data plan. Go to, "settings" - "accounts and sync" - uncheck "auto-sync" - disable the other apps you don't want to sync.
Get an app like Onavo from the app world. It monitors your 3G usage, and can also limit apps to use wifi only.

I have my phone (Motorola Razr) set so that it only downloads email and updates my apps when I'm on a wifi connection. When I leave the house it disables all background transfers as well.
On my Samsung Android device, if I press and hold the power switch, I get a menu that allows me to put the phone into Flight mode and some other things. One of the options disables the data connection. That's the one you are looking for. Disabling sync only disables some things but that option disables all cell data connections.

Yeah, but then if he wants to check it manually, he can't do that. And, if he takes it off flight mode, everything will sync again and it would use all his data.

Best thing to do, disable sync (as I suggested) or if you want it to run via wifi only, you can do that option. That is cool, however, things like watsapp and gtalk on those kinds of things then don't work either. Which, because it is supposed to be instant messaging, defeats the purpose if you only get those messages when you're home.
My HTC lets me swipe down the quick settings from the top of the home screen and disable mobile network (which is the data side) so I still recieve sms phone calls etc, just no whatsapp or twitter updates etc.

Anyone else excited about the Ice Cream Sandwich update? Some people were alluding to offline navigation finally, that's all I'm really looking for.

You must read carefully. I didn't say Flight Mode. I said disable data connection. Everything else still works (Phone, wifi) but the data connection is cut. To check everything you just switch data back on.
