What four pedals woould be essential for an Acoustic setup?
Nothing is
essential for acoustic, but it's nice to have a tuner, compressor (of the transparent variety), chorus and delay. Personally I could happily do without chorus, but most guys like it.

I was thinking Tube screamer in there, Monte Montgomery gets huge fat tones for his soloing
Yeah, I know someone who does that too. Not common, but some players make it work.

why do you guys regard a volume pedal as so essential?
Because it gives you more control over your live playing situation. Back off when playing rhythm, full-bore for solos. If you're using amp drive (or in front of an overdrive pedal), it lets you control how much drive you get. You can do swells for effect or to pad out the band sound without being obvious about it. For me, I have the added joy of having to make sure the amp is balanced against the piezo sound through whatever PA I'm using, so it's pretty essential.
I think you'll find it's more the guys who use a clean to crunchy amp who find volume pedals essential - it's less effective with a high gain amp (unless it's in the effect loop).
