The little italian dude seems to be playing a scalloped fretboard, does this help with tapping?
I don't want to claim to be an expert on this but from my experience the scalloping would slow you down, however it gives a far greater control over vibrato. I can only theorise (cause I 8-finger tap) that it helps with the fact that your pinky approaches the neck at a slightly awkward angle which makes it hard to get notes to sound nicely, and that the scalloping would help get a more consistant tone out of the note as once your finger makes contact it would allow you to get a more powerful grip on the string.

Alex Hutchings is a monster player, lovely touch and as you say has all the chops and extremely tasteful!
I highly recommend checking him out, conveniently* he is now the new demo guy for BOSS and has done some amazingly cool product demos, for instance their new ME-70:
* I say conveniently as it gives you a way to check out cool products while checking out a cool player, that is if you like BOSS products ?

the tapping video is not my cup of tea, but I can appreciate the talent and the effort invested into the technique.
Thank you for having a mature and rational outlook on music ? afterall if it can inspire anyone to wanna pick a guitar and play more it can't be all that bad. Though I would like to state that "Scarecrow's Dance" is more a party trick composition like "Eugene's Trickbag", below I've included examples of his actual music.

Alex can play so well because he knows how to adjust a guitar strap ?
Absolutely! he wears it like a little medalion of excellence ?

He was also part of Guitar Idols in 2008 and 2009 (I think) He didn't win , but that's where Vai took a liking towards his playing. Crazy stuff...
Absolutely correct, I highly recommend checking out his entries:
Guitar Sbrego
Marrakesh Market
This one is more for those who like the heavier kinda music.

even though that intro voice is really stupid. lol.
Yes it is annoying, when I started learning it everyone would jest that I couldn't get the "intro" right. Luckily they included it in the backing track, OH YAY!!! - sarcasm intended.
Just for a closing note, Daniele Gottardo got a lot of his inspiration for his 8-finger technique from one of the original masters of it - T.J Helmerich
Here's a great video of T.J Helmerich and fellow partner in crime Brett Garsed playing an awesome rock fusion track called "And Then A Crow Came Out", they're both amazingly gifted and melodic players which I highly recommend checking out. Watch the video and feel your jaw drop as you marvel at the strength and finnesse which T.J Helmerich employs with his pinky, also Virgil Donati is on drums. It's just pure inspiration for me, and I hope that it does the same to you ?
