Not sure about pedals specifically, but in some instances, getting the polarity wrong could release the hidden smoke most electrical devices contain. Once the smoke is gone, the device generally doesn't work. Sometimes it's possible with specialist knowledge to get the smoke back in there and the device working, but not always.
Best to make double sure you get the polarity right first time out ?
