I am busy learning "We used to know" by Jethro Tull.
The song does have the same chords the whole way through, so the secret is to add something to each verse or else it does sound a tad boring.
It's amazing how sometimes the easier songs are quite difficult to get?
Because it's a song (IE music and lyrics) you can also use variations in the vocal part. You can experiment with timing and phrasing.
And remember that Ian Anderson had it easy - he had a band playing with him, which gave him a lot more shades of light and dark. Make the most of the lyric. If a song has a good story in it, paints pictures in the mind, then that can also hook the listener.
