I'm quite interested to know why Marshall would use 2 x 80W speakers in series as opposed to 2 lower wattage speakers in the 602 amp.
Ehhh... sounds good? Guitar speakers have gotten better power handling over the years because better materials became available but the main focus is still that the speakers need to sound good for the money. If you look at the price of the Blue, it would even seem that using old-fashioned materials is more expensive. Now if you were talking PA purposes I would agree entirely, but 2x80W is just waaaaaay too much and lower power handling speakers probably was not attractive.

I'm wondering is there is any way I could try out a couple of different combinations without destroying my entire credit line buying speakers.
If you find a way, let us know. There are about 500 members here who would also like to do so and another 1500 who will start thinking along the same lines as soon as the first 500 start posting ?

If you connect speakers of equal impedance in series, both are going to get the same voltage drop over the speaker and they will see the same current. So the power they dissipate (either as heat or as motion) will be the same. So the one with the least power handling will be limiting. So yes: 25+30=50.
