GAS - with the G standing for "Gear" - is not a guitar thing. It's a hobby thing. Or a question of believing that gear can do magical things for your performance. Look at golfers. If only you had that Tiger Woods Signature putter....
Golf and guitars (and, I'd imagine, drums) are GAS-rich fields. I'd imagine there's less scope in, say, Rugby. Oh and sax playing - I saw an interview with Bill Clinton recently, and the interviewer (Elvis Costello) got Bill talking about his gear. Bill has GAS, no doubt about it (though I'd imagine he gets a load of freebies).
If you are buying guitars as investments (some people do) does that count as GAS?
My wife is a knitter. They have GAS too. Her circle of knitting friends all have a "stash" (that's what they call it) of wool sourced from all over the place. They even take it to show each other sometimes. If you're really good friends you might be allowed to touch. My wife has wool that, as far as I can see, is just there so she can show it off - there's no signs of it actually being knitted into something.
They have a good justification for this: "You're a long time retired."
