What can all this like to mean?

But the jargon.... OK I get out the house occasionally and am making vague half-hearted attempts at having a life, but although I don't know what all of this means I am intrigued...

OK... I suppose that first bit might be saying that when you unzip you have 360Mb of ..... stuff. But what relevance does that actually have?

The relevance is probably in the sheer audio quality and number of samples you can layer to make the thing believable. The velocity layering simply means that they recorded the bass feathered, plucked and torn in half. You then mix these samples to get anything in between. Or at least, stuff that sounds like it.

OK.... so if my flat head is grasping all of this there are multiple layers in a sample?

So then can the software strip out the different layers or change the balance between them?

If it comes with it's own software, then I bet it does everything automatically. It will be able to use different samples for two consecutive notes and mix them according to the 'volume' you program the MIDI notes to. (Velocity is just MIDI-speak for how loudly you hit the note, they wanted to emphasize the distinction between that and output volume)
It would really be impressive if you could get convincing sliding notes etc...

Correct. As the velocity changes, the sampling software crossfades between the different samples to get a more realistic tone to go with the dynamic.
