I put new 12AX7s into my Peavey Classic 30...

...and it's gotten bloody loud. My old tubes must have been pretty worn. I decided to change them as my amp started making funny crackling noises again. I changed all 3 (still using Sovtek 12AX7 EH), but my amp now has some serious treble going. The highs are seriously ear piercing. It actually hurts. Is there some cure for this? I.e different brand of tubes. I've turned my treble control to 0 but it still kills.

JJ's tend to be darker, perhaps worth a try.

Fixed bias and anyway, no need to rebias any amp unless you change power valves.

The Sovtek 12AX7 EH has quite a bit of an upper midrange "bite" that I don't like in Voxy design amps, which is probably what you are hearing. If you want to stay Sovtek, then the 12AX7 LPS is a better option, which is a lot smoother and more balanced, otherwise the JJ would be my first choice with a new production valve.

Have you tried running the amp through a power conditioner?
Mine also use to hum like crazy and make crackling sounds, but the power con sorted it out.

what year model is yours? (the old ones have got a history of being unpredictable)

My one is made in 2004...
Mr valve did have the LPS. Didn't know anything about them, so I just got the EH. Yeah, there is some serious 'bite'.
What is rebias?
I've also recently changed the EL84s. Does that mean I need to rebias? How?

I'll leave the detailed explanation to one of the electrical types, but it is a voltage setting that helps the tubes operate in their best range. Some amps need the bias adjusting to suit new valves. Fixed bias means you can usually pop in tubes with no adjustment, so you don't have to worry.
