if a Strat's bridge and middel pups or neck and middel pups r on...the pickups work as a humbucker write?

They will be in parrallel and cancel hum yes, but not be "humbuckers" per se' as humbuckers are usually 2 coils in series.
That is if mid pup is RWRP.

Correct. And not all Strats have an RWRP middle pickup... Some people don't like the sound of a set with an RWRP middle pickup, which sound subtly different from a normal wound (that's why some top sets like the CS '69s are non RWRP).
