Personally I started liking Knopfler's tone less when that album came out (and I'd have told you that at the time).
Each to his own. I prefer his SC tones too, but there is no denying that
BIA is a glorious humbucker tone.
That's the thing, as far as I'm concerned - HB and SC tones are different, but neither is better. I generally like the snappy attack and dynamic range of single-coils, but sometimes the thicker, hotter, more compressed tone of humbuckers is better suited to the piece of music. Music is like painting - sometimes you want a wider brush (humbuckers) and sometimes you want a smaller, more precise one (single-coils).
In thinking of humbuckers, people also tend to think only of the PAF style models and forget the "other" humbuckers - the brighter, janglier Rickenbacker, Gretsch and Fender models. Some very good tones amongst those too.
