If you want 60s psychedelia and, according to me anyway, the first dawnings of what came to be called world music then go for the early Incredible String Band albums, especially
5000 Spirits and
The Hangman's Beautiful Daughter
If you want early takes on the acoustic guitarist as virtuoso then try Davy Graham, John Fahey or Leo Kottke (or go even further back and head for the Reverend Gary Davis).
Lots of things to try. Try some local acts - Steve Newman, Tony Cox, Nibs van der Spuy, Guy Buttery or Cabins In the Forest.
Bela Fleck has done several interesting things. I have recently listened to and enthused about his collaboration with Edgar Meyer, which is accoustic but not guitar.
There's a fab album by Edgar Meyer, Russ Barenberg and Jerry Douglas -

Bruce Cockburn has included solo acoustic pieces on his albums over the years and several of these are collated on the excellent
Speechless.
Just loads of stuff. Don't think of "acoustic" as a genre. The breadth of music that is played acoustically is very... .well it's very broad.
