Which manufacturers make the best quality pots, jacks and switches?

Pots: CTS (Bourns are also good). CTS make to spec, so quality varies. Spec'd and repackaged by DiMarzio or RS Guitarworks (their Super pot especially).
Jack sockets: Switchcraft. (I also like the Neutrik sockets, but they are BIG).
Switches: Switchcraft for most, Oak Grigsby for 3- and 5-way lever switches (CRL also OK).

Get the DiMarzio branded stuff from Marshall Music - they use Switchcraft sockets and switches, CTS Pots and CRL lever switches.
