I see that although I have "Hide email address from public" checked in the CP - it still shows up in my posts (on the left with all the other icons). Spambots are probably harvesting the emails as we speak.

The hide-email goodie only hides your info from anonymous users. ie: search engines etc. If you log out and look at your posts (like a search engine would), you shouldn't see any email addresses at all.
Let me know if that's not the case.

Actually I think it hides email addresses for all but the owner. I just checked Alans profile (while logged in) and his email is listed as "hidden".
