It does get cold enough to cause tuning problems. I have seen several people (some of whom have enough experience that they should know better) go and tune up outside in the cool of the evening, then walk into a warmer room and get up on stage and find they're out of tune or their guitar needs retuning all the time.
Another reason for letting the guitar acclimatise - no matter what the conditions.
The other good reasoning for opening the case just a little is to maintain protection against knocks, spilled drinks etc.
