I have heard Elliot Fisk murder Paganini in a technically impressive way, while Itzhak Perlman fudges it a bit but transcends the (few) limitations of his playing, making it a far more enjoyable and listenable experience.
I also have many recordings of Wanda Landowska where she proves that the harpsichord is nowhere near as limited for expression as most people think - and she does it playing Bach, whose works are often accused of being soulless (mainly because they attract the more technically precise player).
