Mrs X-rated and I cooked up some banana chutney yesterday. It's not a big schlep, the results (I've made it before) are a tasty, slightly tart relish, and at about a tenner a jar you'll save some money.

You can use old glass jars with a screw on lid. Just wash them in the dishwasher immediately before bottling. Nigella says this is fine for jams and chutneys, for which the jars need to be clean so as to avoid spoiling in the jar.

Thinly slice 800g peeled bananas.

Take one large green pepper. Discard the white inner portion and the seeds and chop the green flesh finely.

Finely chop two onions.

Stick all that in a pot with
740 ml white vinegar
2 cups sugar
225g sultanas (the packet is usually 250g and the extra 25 wont hurt anybody)
2 teaspoons each of salt and curry powder
1 teaspoon tumeric
1/4 teaspoon thyme
1 pinch each of pepper and ground cloves
2 cloves garlic - finely chopped

Mix well. Simmer for one hour. Bottle.

When bottling seal the bottle with grease proof paper and then screw on the lid. This is to prevent a reaction between the hot preserve and the metal in the lid.

Take care when bottling - the relish will be very hot.

let the jars cool, then put them in a cool cupboard for two weeks.

Once you open a jar keep it in the fridge.

The above should fill 5 or 6 jam jars.

Mrs X-rated says bananas are cheap right now, so this is a good time for banana chutney making.

I don't worship at the temple of Nigella, but I do think she knows a bit about food preparation.

Haha - my sentiments exactly! The shock factor of watching all the butter and eggs go in the food is actually quite fun. Yes yes, small things....

That sounds very good Bob, going through a Atchar phase at the moment, but that'll be a nice diversion.

I think they used to boil the bottles in the old days - if you don't have a dishwasher you may need to do this.

I guess if you're not into bananas you can replace them with mangoes or even avo (I've heard).
