Do you know if the Fish&Chips give the signal a pre-amp boost as well by any chance? Wondering if it can be used to pre-amplify and EQ an acoustic pickup without a preamp?

EQ's usually have a 12 to 15dB boost.

Magnetic, yes. Piezo - maybe, but probably not. Check your specs and compare pickup impedance with pedal input impedance. If input impedance is double or more the pickup, you're golden. If not, then you're losing bass and volume and then trying to put it back with EQ (which never works). Then you're better off getting a cheap active DI.
