I have read that unplugged they sound sound thin and the quality isnt great. Setup issues I can sort out myself.
If you reckon the Fenders are k*k what would you recommend in the same or (moderately) higher price bracket?

I don't know what the price range is, but those don't look like good acoustics to me. They look like something that you can plug in on stage if you're a rocker and want to keep up appearances whilst you do the sensitive spot in your show.
Action is not that big an issue - a set up will sort that out. Bear in mind that at some point tone will be compromised if you go too light on the strings - that's likely to be more of an issue for you, I think.
If this at the not too expensive end of the price range then look at Cort or Tanglewood.
You sure you want electronics? If that's not such a priority, or if you don't mind fitting aftermarket electronics (which can be removed later on and transferred to another guitar) then the Taylor Big Baby is the best bargain around. If you get a well cared for 2nd hand example you'll get good guitaring bang for your buck (unless you want a blue burst with the tree of life up the fret board, in which case the Big Baby is NOT the guitar for you). No cutaway, but they don't have a big heel and the neck is real comfortable for most folks.
