So I have a 5 piece kit I want to use as a 4 piece so obviously you just remove one of the toms. May seem like a silly question but then which tom do you keep, the bigger or smaller one? Or would you need to retune to keep the difference between the tom and the floor tom less?

I'm presuming a standard rock kit (12", 13", 16")? I'd prefer the 12" over the 13", but it's personal preference and either can work.
Tuning is also to preference, as long as it's within the range of the drum. Experiment a bit and see what works for you.

Alan is spot on. Most guys tend to lose the 13" and play the 12 and 16. All depends on what works for you.
