I know this is something that a 10 year old should be able to do....

I fitted a tortoise shell pickgaurd to my acoustic, now it's got these nasty bubbles underneath that I can't get rid of...any advice

Smaller ones will usually disappear themselves over a few days. If you have some larger bubbles, try moving the bubbles by rubbing the pickguard and "herding" them to the edge. Don't forget to remove the plastic coating.

Plastic is off and the pickgaurd has been on a couple of weeks. Tried the herding thing but doesn't work...should I take a hair dryer to it?

Yeah. That's the next step. It'll soften the guard and loosen the glue, so the herding thing should be easier.

Okay, tried the hairdryer....still lifting up at the edge...and one bubble.

Is there a glue that I can safely use? Meaning, if I want to change it again, I won't need a hammer and chissel?

I think LMII has the proper pickguard adhesive tape...
