He is playing a Stick: http://www.stick.com/ - it's a 10 or 12 string tapping instrument best known for Tony Levin playing it (well, half of it) with Peter Gabriel on tracks like Sledgehammer.

Emmett makes everything except the tuners himself, although pickups by EMG and Vilex are options, as are Roland GK MIDI pickups.
