If he was saying it about his own stuff, super humble and humorous. Nonetheless, I feel like that all the time when I happen to play and someone's around.

I reckon there needs to be a bit of humility, but confidence as well.
I saw an interview with Slash where he said he doesn't think of himself as great, he's still trying to do what he did when he was 15 years old.

I reckon the Kotzen one was him maybe feeling he had a bad night or really screwed something up in the previous song, hehe. The responses all said it was a brilliant show. I guess we just all have those moments... even those awesomely good people.
As for the Holdsworth thing... I dunno. Even Jimmy Page was embarrassed for what he played... no idea why. Maybe he felt it was too simple compared to a Clapton or Beck thing at the time. Or he was just being a snotty bitch.
At any GIT thing where van Halen was, whenever he was asked to play something he ran away. Maybe the half a tongue got to him and he was shy.
