Sorry if this has been asked before but I couldn't find anything on it.
Is this possible? And if so, how difficult is it really?
Gearhead
Which of your four guitars listed do you want to convert?
I would recommend against converting any acoustic because of the increase in string pull. The top needs more bracing to support it and the neck might need attention as well.
Electrics should be easier, but if you run out of headstock space for all those tuners,.... Well, then you've run out.
DonRoos
I would certainly advise against it. The extra tension of another 6 strings could rip your pride and joy to shreds. Rather get one that was built to handle the tension.
Bob-Dubery
Apart from anything else, you'd need to cut a new nut. That's one part of the guitar you want to be very careful with & very precise with.
Also see Don's & Gearhead's wise observations about the increase in tension.

@ Gearhead: I was actually thinking of the acoustic, but I was also very hesitant...
I tend to agree and think that doubeling the tension might not be such a good idea.
Thanx for the rsponse guys, but I think your right, this is a bit too risky to attempt.

If you had a bolt-on Fender electric, my answer would have been, "easily." You can buy a 12 string neck from Warmoth. Some tuners. A bridge. And Bob's your uncle. Yet another GASsy thought running around me head - Telecaster 12 with a hocky stick headstock neck and a TV Jones in the neck position.
Gearhead
Apart from the hockeystick you also want the XII pups, I guess half the sonic difference is in those things. But then, they do not fit a Tele rout. Real GAS would dictate one needs a real XII, and an early sixties one at least while you're at it ?

Yeah I was gonna say that 12-stringers generally have wider necks as well.
