Another theory could be that the coating makes the strings stick more in nut slots or tuning pegs, leading to longer settling times. I have experienced the same thing with those two brands by the way.
I don't know about the diameter issue. I'd have thought that by now some guitar tech would have said something to me about that, none ever have.
The Elixirs are actually more slippery than the D'Addarios. At least under the fingers. I have a song I'm working up for TJ's that requires a slide on two strings in the little instrumental passage I put in to provide short-lived relief from the doom, gloom and darkness. I was practicing on the Morgan (strung with D'Addarios) and thinking "Wow! I thought I had this waxed, but I haven't." (I was fractionally late each time). Switch over to the Larrivee (strung with Elixirs) and there is slippery slidey happiness all over the place.
The "settling in" is not a big deal really. In practical terms it is no inconvenience to me at all. I did notice it, and I wondered if it was real and if so what it meant. My answer to both is "don't know".
