Three words - Graph Tech GHOST. I've used Fishman, LR Baggs and RMC and the GHOST system works and sounds best. It's also a modular system, so you only add what you need and they have a wide range of saddles and complete bridges.
Do they sound like a real steel string acoustic? Not exactly - they still have a bit of a piezo zing, but like any UST system, close enough for most and they blend very well with electromagnetic pickups (especially humbuckers) to broaden the flexibility and tonal range of the guitar. They also do some things with percussive techniques that you can't get with anything else. Adding in something like a Fishman Aura would also get you a lot closer to a more natural acoustic sound, but honestly, the characteristics of piezos actually help them to hold their own with the electric sound. BTW - I've just added a Baggs Para Acoustic DI to my rig and it is working really well.
There are a couple of LP-style Tune-O-Matic bridges available, both Nashville and ABR and both available with US and Asian studs (which are different sizes/threads). Couple of different brands of bridge too (Graph Tech Resomax, Schaller and Gotoh last time I looked). I think they have a special on the Schallers ATM - about $100 for the GHOST-equipped version (less than a set of saddles). Where you will run into a problem is with three saddle Tele bridges - there are no piezo saddle available for those. I've discussed it at length with Dave Dunwoodie from Graph Tech (who developed the system) and it's a physics problem - there is too much crosstalk between two elements in one saddle (causing phase cancellations that lead to comb filtering) and one shared element ends up being too distant from both strings. Six saddle Tele bridges are no problem though.
Marshall Cape are the distributors, but I don't think they stock them, so best to get directly from GT. Being modular, the price depends on what you buy (about $200 for the basics - a set of saddles and a preamp).

Three out of four of my guitars have GHOST systems (two six string electric, one nylon - and my electric 12 will probably end up with one too). I have the 13-pin Hexpander in two guitars and the Acoustaphonic preamp in all three. My electrics are unique custom installs though, because I like to keep the piezo, electric and 13-pin outputs separate (can get a bit hectic with cabling though and the wiring would confuse most techs). I always fit a battery compartment too (probably essential for the archtop and the Tele both - I've fitted to a tele Before, but it's a tight fit with battery and preamp in the control cavity).
