I'm guessing you're talking about the Southern Baptist gospel style. I totally dig it as well. We've been working on an arrangement of Amazing Grace (chords - Dmaj7/Bm7/Em7/A7) but the vocal harmony bits are incredibly difficult for my untrained voice. I battle with the don't-sing-the-same-as-the-singer thing as well. It would be great to learn more on developing that skill.
Of late, our band warms up singing the last bit of Message in a bottle (the sendin' out an SOS bit) and we've tried a few scale based exercises as well (i.e. one person singing the solfege in Ionian, the second in Dorian, the third in Phrygian etc.) and we pick which one sounds the best and use that.
We've kept it pretty simple for now (singing in major or minor 3rds and 5ths), but i'm going to rock the boat a little this evening by suggesting 7ths.
