With a show like U2s there are a large number of things that can go wrong. And with the scale of the shows that they do the embarrassment if something did go wrong would be considerable. Their crew make a big contribution to the show.
Generally the off-stage guys have an important role to fill, even at smaller scale shows. Screw up the FOH mix and you can lose the audience. Screw up the monitors and life gets hard for the band. Guitars have to be kept in tune, all the gear needs to be where the players can find it. There are so many overlooked tasks. It may not be such an issue for U2 because they take their environment with them, but think of a band that is playing in-door theatres, with different layouts. Somebody has to plot a route that allows the artists to get onto the stage, and with no chance of tripping over cables or knocking against equipment that may fall over.
There is a huge amount that goes on, that is not apparent, but that makes a considerable contribution to the success of the show and the tour.
