There is probably lots of insurance involved these days and that may force issues. I notice that for the show in question a refund was offered to all ticket holders. Insurers would prefer to shell out for one cancellation, not a string, and will probably remind you to err on the side of minimising the risk.
These superstars who insist on ice cubes made from a specific brand of bottled water are not necessarily just being spoiled brats. In some cases there will be clauses in insurance about drinking tap water. An old friend of mine does special effects for movies. He told me a tale of one star who, when he did a rain scene, had to be sprayed with bottled mineral water. Not because he thought his complexion was especially delicate but because that's what the company insuring the movie against over runs or cancellation insisted on. So they had to fill tankers with approved brands of mineral water.
